    Shobji ( Vegetable Curry ) Masala

    We Bengalis love vegetables, our mal is incomplete without a serving of vegetables. This is an absolute comfort curry.



    Take vegetables of your choice, and paneer ( cottage cheese)/ tofu if you want and take some Vegetable masala and lightly coat the vegetables adding a little salt.

    Now in a pan add oil and lightly fry the vegetables, then keep aside. In the same oil, add chopped tomatoes and the rest of the masala mix. Fry till oil separates, then add the vegetables, salt to taste and a little sprinkle of sugar and toss them. Now add 11/2 cups of water and cover and cook till the vegetables are done.

    Garnish with some lime and fresh coriander and serve with rice or flat bread

    Ingredients: Cardamom, Clove, Cinnamon,, Bay leaf,, Ginger powder, Cumin powder, Coriander powder, Turmeric, Chili powder.
